Classic Béarnaise Sauce

Ingredients:
8 oz Chef Creations Hollandaise Sauce
1/4 cup White Wine Vinegar
1/4 cup Dry White Wine
1 TBSP Minced Shallots
1 TBSP Dried Tarragon
Salt and Pepper
2 TBSP Minced Fresh Tarragon

Procedure:
In a small saucepan, combine vinegar, wine, shallots and dried tarragon. Simmer over moderate heat until reduced to 2 TBSP of liquid. Cool and strain through a fine sieve. Stir reduction into warm Hollandaise Sauce.
Fold in fresh tarragon.
Season with salt and pepper to taste.
