Ingredients:
8 Boneless Skinless Chicken Breasts (2 to 21/2 lb)
1 TSP Salt
1/2 cup Flour
3 TBSP Vegetable Oil
2 Slices Bacon, cut into 1/4 " pieces
1 cup Milk
11/2cups Unsalted Chicken Stock or Water
1/2 TSP Black Pepper 32oz Package Buttermilk Biscuits or 10 Ready Mix Drop Biscuits
1 Box Chef Creations Poultry Gravy
2 Cups Frozen Peas and Carrots
Procedure: 1.
Season chicken with the tsp of salt. 2. Dust lightly
with flour. Brush off the excess. 3. Heat the oil in a deep, wide,
heavy bottomed skillet and sauté the bacon until slightly crisp.
4. Remove bacon and brown the chicken in bacon fat and oil,
slowly on all sides until done. 5. Remove the pieces of chicken. 6.
Discard all but 2 Tbsp of the fat. 7. Preheat the oven to 400F.
8. Heat the Chef Creations Poultry Gravy in a medium saucepan. Let
simmer until needed.
9. Place the chicken and bacon in a
deep oven dish and cover with the gravy. Add the frozen peas and carrots.
Cover the surface of the dish completely with the buttermilk
biscuits. Dip the tops of the buttermilk biscuits in an egg wash as you place them
on top. You may also use ready mix drop biscuits. 10. Bake for about 15
minutes or until the biscuits are golden brown. 11.
Serve hot.
